Hodge - I have the recipe here at home. I believe I got it out of an old cooking magazine!
For the pesto you need: 1/2 clove of minced garlic, 1/2 tablespoon apple cider vinegar, 1/2 teaspoon sweet paprika powder, 40 ml of olive oil, 40 grams of mixed herbs (parsley, chives, basil/oregano), salt & pepper to taste.
Throw that in a food processor and blitz it for a few seconds. You're done with that.
In a little bowl, mix 75 grams of cream cheese, 1/2 teaspoon erythritol, and salt & pepper to taste. Wash a cucumber and with a vegetable peeler peel it lengthwise into long strips. You can get about two servings out of one whole cucumber.
Then with a butterknife, spread the cream cheese mixture on the strips and roll them up.
Place the rolls on a plate and garnish with pesto.
The pork patties were just pork mince mixed with a patty spice mix that I found at the grocery store and fried in olive oil.
I hope you like the cucumber rolls. Very easy to make, but very tasty!
